This recipe of Hamburger Soup comes from the Maritimes – it's been given high praise from CGIT campers. You might want to try at an event with your group!
Hamburger Soup
6 lbs ground beef 4 onions, chopped
4 – 28oz. tinned tomatoes, diced 8 cups water
16 carrots, chopped 12 stalks celery, chopped
32 T pearl barley 2 tsp thyme
4 bay leaves salt and pepper to taste
8 cups beef bouillon (or 8 cups hot water with 8 beef bouillon cubes)
sprinkle of parsley
4 cans tomato soup
Brown meat and onions. Drain well.
In a large pot, add all other with the exception of the tomato soup.
Bring to a boil and then reduce to a simmer.
Check for thickness after one hour as it may require more water as the barley cooks.
Cook for at least 2 hours. Add the tomato soup.
Simmer until serving time.
